Are you looking for a good recipe for shaved beef and summer veggies? Here is a recipe. The recipe uses Korean Gochujang and sweet-spicy hot pepper paste from Korea.
The eggplants absorb the sesame oil and create great savory flavor with the Korean Gochujang.
The summer veggies also will have a wonderful sweet taste being sautéed and mixed with the paste!
The beef, eggplants and the other veggies create a great harmony after all thanks to this great Korean hot pepper paste.
And of course, like the other recipes introduced on this site, this recipe is ketogenic and low carb. I am using alternative ingredients to replace some of the starchy, high-carb ingredients.

I used those items to make the plate however you may replace some of those vegetables depending on what you have in your fridge. Onion and eggplants are essential.
Shaved beef
Eggplant

Tomato
Sake(White wine)
Soy sauce
Psyllium husk
Sesami Oil
Garlic
Roasted white Sesame
Whole Earth (Sugar substitute Stevia/Erythritol)
Gochujang
As carrot, eggplant, gochujang contains some carbs, be careful with the amount of the carb that you are consuming.
Alternative ingredients to make it Ketogenic
Those are the alternative ingredients that I am using to make the dish ketogenic.
Psyllium husk = potato starch(×5) If you want to use potato starch, you will need five times more amount of it.

Instructions
Cut Onion, Eggplant, Sweet peppers to narrow forms. Carrot should be sliced to small pieces.
put the shaved meat in a small bowl, and marinate with 1 tsp of sake and soy sauce each.
Sprinkle psyllium husk on the meat and mix it well.
In a cup, mix all the ingredients marked " *".
Put 2 tbsps of sesame oil on a pan, and sauté the eggplant with medium heat. When all the eggplants are well done, put it away on a plate.
Put rest of the sesame oil on the pan, and sauté the shaved meet, onion, and carrot. Still with medium heat.
When the onion gets done, put the tomato and sweet pepper. Put back the eggplant in the pan too.
