It often happens that I have lack of fat amount when I am working on Keto diet.

Is there any easy, good Basque cheese cake recipe? I would like to try more cream cheese recipes which allow me to intake more fat :9

Hi, I am Leto, a Japanese currently living in the USA. I have been working on Ketogenic diet as I started to have some symptoms when I eat a lot of carbs.


Usually, all purpose flour or cake flour is used in Basque cheese cake, however, I am using alternative flour in this recipe. Also I am using sugar alternative to make the recipe Ketogenic.


The Basque cheese cake has been very popular in Japan these years, and I always wanted to eat it. But, well, it was hard for me to look for “Keto” version.


Therefore I tried to make it by myself, and wow, it was a lot easier than I thought!

Keto Basque Cheesecake | What is Basque Cheese Cake?

Basque cheese cake is a cheese cake originally from Basque region of Spain. The cake has been called “Tart de queso (Cheese cake)”in the region.


Basque cheese cake does not have crust on the bottom of the cake. Baking with high heat creates crusty texture on the surface of the cake, which produces bitter yet savory flavor on the cake.


It is often compared to New York cheese cake, which is baked with low heat and has cookie crust at the bottom.


You may be surprised with the surface color of the Basque cheese cake as it may have very strong dark color. However, you can be assured that, the part is the key to create the very tasty flavor of the Basque cheese cake.

Keto Basque Cheesecake | Cheese cakes are very Ketogenic

Cheese cakes which use a lot of cream cheese are very Ketogenic.


Let’s check the PFC balance of this recipe. Please take a look at the graph below. As you can see, it contains 79% of Fat, 16% of protein, and 5% of Carbs.

If you consider that you need more intake of fat, this cake can be perfect “fat bomb” to you. Isn’t it great that you can intake fat enjoying very rich, savory flavor cake?

Keto Basque Cheesecake | Ingredients


Ingredients are as follows;

  • Cream Cheese
  • Heavy cream
  • Sugar alternative (If you want to use sugar, it is OK too.)
  • Okara powder
  • Egg


Okara powder

Okara powder has very close texture to flour and yet, it does not contain much net-carbs. Almond powder is often used as an alternative for any flour, but Okara powder works a lot better.


Okara powder is made of soy beans. The ingredient is made in the process of making Tofu. After squeezing juice of boiled soy beans to make Tofu, the left over is called “Okara.” Okara has been used to make salad and so on in Japan.


If you are on Ketogenic diet, the benefit is very clear to substitute flour by Okara powder. The carb that is contained in each ingredient is as follows;

It is recommended to use “fine” version of Okara powder so that the texture can be very much like all purpose flour.

I just started to use this powder and just fell in love with it. It has perfect texture as an alternative. Though, I do not understand why the zipper does not function to close the bag. I am using a clip to close it.

Keto Basque Cheesecake | How to make

1 Make cream cheese room temperature. If it is cold to use, use defrost feature of a microwave, and microwave half a min.


2 Cut cooking sheet a little bigger than the form. Soak the paper in water and put it on the form.



3 Set oven to 220C(425F).


4 Whip the cream cheese till it becomes smooth.


5 Put all the sugar alternative and mix well.



6 Pour beaten egg in the mix dividing to 2 to 3 times. Mix well.



7 Add Okara powder and mix well.

8 Pour heavy cream little by little mixing.

9 Pour into the form.



10 When the oven reaches to the designated temperature, bake 40 to 50 min on the middle rack.


11 When the surface totally turns to brown, done!



12 Leave the cake for half a day. You can eat it as how it is, or make it colder in a fridge.





As looking at the surface of the cake looked very burnt, I was wondering if it can be very bitter. However, unlike my expectation, it was slightly bitter, yet sweet and very tasty!


If you eat it with room temperature, it has little bit fluffy and light texture. If you make it cooler, you may feel the taste of the cream cheese more.


Either way, I can assure that you can enjoy the cake!

  • 200 g Cream cheese
  • 200 ml Heavy cream
  • 30 g Whole earth Sugar : Equivalent to 60g
  • 12 g Okara powder
  • 2 Eggs
