The summer temperature is getting hotter and hotter every year. It is expected to be hotter than normal this year too.


When it’s too hot, I cannot think of using oven. Therefore, instead, I have been making summer dessert without using oven these days.


This page is the recipe of “Keto No bake cheese cake.” With the citrus fresh taste, and the mild texture with the heavy cream, it is a perfect dessert for summer time.


To make it ketogenic, this recipe uses Soy milk and sugar alternative as ingredients.

No bake Keto cheesecake| Agar Agar is a great Keto ingredients to make the mix solid

To make the “no bake cheese cake”, you need some ingredient to make the mix solid. In this recipe, I am using this “Agar Agar powder.”

Agar agar is made by seaweed. As it is plant based, it can be used by vegetarians. Also, it contains very small amount of carbs so that it can be said that it is Ketogenic ingredient.


It perfectly makes any liquid solid, once boiled and cooled down. Usually it can make 600ml to 800ml of liquid solid with the amount of a tea spoon.

No bake Keto cheesecake | Need a crust? Prepare at least one hour before

If you think of any cheese cake, usually you would imagine it with a crust under the cake.


Though you do not need to have any crust to enjoy this recipe, if you want it, make it beforehand at least an hour before. This is because the crust needs to cool down at least to room temperature before having the batter on top of it.


If you do not use any crust, you can just pour the batter in some small cup.

Ingredients are as follows;


  • Cream cheese

  •  Heavy cream

  • Soy milk

  • Agar agar

  • Whole earth (Sugar alternative)

  •  Lemon juice

  • Vanilla extract


As a sugar alternative, I am using this whole earth. It is made of stevia extract and monk fruits, so that it does not contain almost any carbs in it.

The taste is absolutely as same as sugar, and you feel no difference. However, you need only half of the amount of sugar, you can also save the space in your kitchen.

1 Make the cream cheese room temperature. If it is solid, make it soft by microwave. Whisk till it gets very soft.

2 Mix the sugar alternative and the agar agar very well.


3 Warm the soy milk with low heat. Sprinkle the mix of sugar alternative and agar agar little by little mixing.

4 Add the cream cheese in the milk while mixing. When it is melted, stop the heat.

5 Add Vanilla extract and lemon juice.

6 Pour the heavy cream in the milk little by little mixing.

7 Put the batter in a mold you want, or on a crust in a mold. Cool down in the fridge for half an hour.

  • 100 g Cream cheese
  • 150 ml Heavy cream
  • 300 ml Soy milk
  • 1 tsp Agar agar
  • 30 g Whole earth (Sugar alternative) Sugar amount: 60g
  • 1 tbsp Lemon juice
  • 4 Drops Vanilla extract

Instructions

  • Make the cream cheese room temperature. If it is solid, make it soft by microwave. Whisk till it gets very soft.
